I agree with Xanthe and Gem. Pink Lady are great. Granny Smith was my favourite a a kid (I only ate green apples) but I think my taste changed as I got older and now I find thema bit too bitter!

I generally like apples to be sweet and crunchy. Also wanted to try authentic apple pie (authentic meaning me seeing the apples sliced and prepared for the pie LOL does that even make sense)
