((You basically have to write that stuff mostly by the seat of your pants. Mostly. You should have a goal of the protagonists from square 1, I think (IE, get out of the locked room, slay the evil wizard of much evil and monsters, erase root beer bears from existence, ect), to at least guide player choice in that general direction to start, but be prepared for, well, anything. Including them turning evil and helping the evil wizard or committing suicide. Also, you have to think somewhat realistically on weaknesses or resistances-don't be surprised if they use a crown which vaporizes whoever wears it on the final boss if he's not nonphysical.))
