Ever been to Your Pie? My dough is similar to theirs but a smidge different. To know my secret, you must know my story.
I used to work at Chill Yogurt(i will not get into the used to part...i hate joe)
The owner had an idea, to bring pizza to one of his yogurt shoppes as a test to see if he can market the idea to the rest of his franchise. So he had one of his buddies who was a manager of a Your Pie, and other places(b merrils) and bring any of the pizza makers he could. So my little Chill Yogurt place was completely turned upside down.
The recipe is the same, except take out sugar for honey. Honey is sweeter and more natural, it's sticky texture bonds the dough together and gives it a rich and subtle taste. A lot of dough recipes use honey, because it is the best(get rekt sugar overlord)
We made our dough from scratch, everyday. I treated my pizzas with the cliched love i would sprinkle in. Now that I don't work there anymore, i happily eat pizza without the stress and rankness that is Joe.
