It's only found postgame like many other special and unique Pokémon.

Yeah, I haven't even completed the main game yet, so that's likely a reason why I haven't exactly run into anything all that unique quite yet. xD

Some of them are tough to find honestly. Would be up to going back if we ever do attempt challenges or something possibly.

I would, but... there's just too many new games that have already seized my interest. And I've barely even gotten into Elden Ring which honestly feels like a game that's got as much longevity as Skyrim does.
