    Got any awesome recipes you'd like to share with the rest of PXR?

    My mom was always awesome with making desserts, and before she passed away, she left us some of her recipes. I can't really make these since it's mostly just my dad and myself now (he's also a diabetic), but I figured these could be shared with you guys if you want to try them out. :)

    CARROT CAKE

    Bake at 350 degrees, 40-50 minutes.

    Frosting:

    8 oz. cream cheese
    2 tsp vanilla
    1 box (1lb) confectioner's sugar
    1 stick (4 oz) unsalted butter

    Cake:

    1 ľ cup pureed carrots (about 3 cans)
    2 cups sugar
    4 eggs
    3 cups flour
    2 ˝ tsp. baking soda
    1 tsp cinnamon
    ˝ teap. salt
    1 cup raisins
    ˝ cup walnuts or pecans (optional)

    Mix ingredients in given order, beating well after each addition. Grease and flour a bundt pan. Pour in batter and bake until a knife comes out clean.



    CHOCOLATE CHIP COOKIES

    Preheat oven to 375 degrees F
    Makes about 5 dozen cookies

    2 Ľ cup all purpose flour
    1 tsp baking soda
    1 tsp salt
    1 cup (2 sticks) unsalted butter, softened
    ľ cup granulated sugar
    ľ cups packed brown sugar
    1 tsp. vanilla extract
    2 eggs
    2 cups (12 ounces) semi-sweet chocolate morsels*
    1 cup chopped walnuts or pecans (optional)

    Combine ingredients one at a time in an electric mixer. Drop cookie dough by rounded spoonfuls onto a ungreased baking cookie sheet.

    Bake for 8 to 11 minutes until they are a light golden brown. Let stand for 2 minutes. remove to wire racks or wax paper until cooled completely.

    * 1 ˝ cups semi sweet chocolate and 1 ˝ cups white chocolate morsels can be substituted for the above listed morsels and nuts combo. You can also use dark chocolate morsels if desired.

    For storage longer than three days, place a slice of white dry bread to keep cookies soft.

    Dang, Neo those look delicious! I got some interesting Austrian recipes I can and will post in a few days when my spring break concludes, but in the meantime I leave you with two delicious ideas to tide the people over:

    I'm gonna be a pain when I get home and post a couple of recipes in metric measurements cause I don't use whatever wacky system you Americans do. xD

    Although those look really yummy...

    ohhhh well I'll post one, but it's not a "make it all completely from scratch yourself" kinda thing. Gonna explain this the best I can so here goes:

    Chicken and Cheese Croissants

    What you'll need

    -Pillsbury Crescent Rolls (or any type of dough brand to make Croissants, just the one named is preferred)
    -Cream of Chicken
    -Any type of canned chicken breast
    -Shredded Cheese (preferrably Sharp Shredded)

    -Optional but preferred: Garlic Powder

    Directions:

    Once you prepare your pan and roll up your dough into their croissants form. Start smearing the cream of chicken on each. Use until you run out of cream of chicken or until each piece of dough is fully covered in the cream. After each piece of dough is covered in the cream of chicken open and drain your can of chicken breast of excess fluids in the can. Start by taking a piece and breaking it apart into small pieces and laying them on top of each of the dough.

    Once each one has enough, use your own judgement on how many you want on it, start pre-heating your over to the requested temp listed on the can for your Croissants (my oven is messed up so mine varies, just run it by what the can says because odds are your ovens run right). Pre-heat to 375 degrees and begin the next step

    Start pulling out shredded cheese and lay it on top of each of the croissants. A little cheese around the sides of each doesn't hurt either as it helps make it easier to scoop up each croissant after it's done cooking as well. After that, if you want to opt for the extra step start seasoning with some garlic powder on each. This one can be, once again, completely up to you as it only adds to the flavor.

    Finally set in the over and just keep an eye on them. Depending on your over it could take anywhere from 11-25 mins to finish cooking. Once the top starts to brown keep a close check on them until the breading looks fully cooked (as the breading takes a bit longer to cook with so much extras on top of it or covering it).

    Once fully cooked, eat while warm and enjoy!

    Ingredients:
    -4 pieces of bread
    -butter. So much butter
    -Ham
    -cheese
    -tomato sauce
    Optional:
    -mayonnaise
    -tomato
    -smiths salt and vinegar chips
    -whatever else you want to stick in this abomination.

    Method:
    1. Use two pieces of bread to create a seemingly normal sandwhich with said ingredients.
    2. But wait, there is more! Put another big of bread on and make it a double sandwhich!
    3. It continues! Use the fourth bit of bread to make it three layers high!
    4. Butter the outside and stick it in a sandwhich press.
    5. Eat it, then proceed to either have a heart attack or go into a food coma for the foreseeable future.
    6. Man up and make another.
