Usually how it works is they make you do some extra activity outside of class that bumps up either an assignment grade, an assessment grade, or your final grade by a certain amount of points. You don't have to do it if you don't want to, as it won't count against you if you do not. However, it is usually frowned upon if you don't do it. Not everyone offers it though. Many of my professors this year are "you get what you earn" graders which means there's no rounding up or extra credit offered.
