OR
...get 13 more Absols (one in each colors + colorless) and Mega Evolve those so I have 13 normal and 13 Mega Absols!?

That would be kind of cool. The best thing about these games are there are no real restrictions. :D

Normally I suppose. Like, do you have that fake (mega) (pre)evolution you'd love to see?
If you can get a sprite of that, you'd be able to do it like normally (with the fake megastone I suppose for megas) and just add the appropriate amount of posts.
In the end it's something aesthetic (and if the final evolution is fake and has a different typing it wouldn't count for legends)
E.g.: If I make a Mega Shedinja for example and let's say it's Ghost/Dark. I'd just do another Shedinja, buy a fake megastone and "evolve" it, like I was handling a normal mega evolution. Mega Shedinja would still be Bug/Ghost for legendary purposes though.

EDIT: To clarify, it wouldn't be up to Speed or Gigi to do the sprites though. You (as in the person getting the mon) would need to have the appropriate colored sprites if you care about them.
